Fried Rice

My take on Dad’s fried rice.

Rice (enough per person) = £1.80 for 1kg

2 Eggs = £1.50 for 6 free range eggs

Chopped Brown Onion = £0.20 each

Sliced Ham or bacon (optional) = £2.00 for 125g of ham

Mixed frozen veggies = £1.20 for 1kg bag

OR selection of fresh vegetables of your choice (Mushrooms = £1.00, Peppers = £1.00, etc.)

Dark Soy Sauce = £1.20 for 150ml jar

Method: Cook the rice separately. In a large fry pan, lightly fry all veggies and ham. Scramble 2 eggs in a bowl and cook in the microwave for 30 seconds. Add semi scrambled egg and drained rice into the vegetable and ham mix. Add soy sauce, fish sauce and other seasoning to taste. Serve hot.

Cost: This will serve 4 – 6 people and cost under £9. You can easily refrigerate and serve for left overs or side dishes later in the week.
